Green Onion Ginger Chicken

A simple favourite.


This recipe was originally found on a website that no longer exists. My mom printed out the recipe to try it and it’s been a loose sheet in our cookbook ever since. This dish has consistently been selected as a birthday dinner over the years and it will forever be a favourite.


Ingredients

  • 2 cups rice
  • 8 pieces skinless chicken thighs
  • 1 teaspoon chopped ginger
  • 1 bunch   6 bunches chopped green onions
  • 1 teaspoon sesame oil
  • 2 teaspoon sea salt
  • 1 teaspoon soy sauce
  • 1 teaspoon granulated sugar
  • 1 tbsp chili flakes
  • ½ cup oil (canola, olive, or sunflower)

Directions

  1. Cook rice according to instructions on package.
  2. In a pot, boil enough water to cover chicken thighs. When water has boiled, gently place chicken in pot and bring back to a boil.
  3. Place lid on and turn element off and let chicken stand for about 20 minutes.
  4. Meanwhile, in a saucepan, cover next 7 ingredients with oil and heat thoroughly for 2 minutes.
  5. Cut chicken into pieces, toss with sauce, and serve with rice.
